Carrot, Sweet Potato and Orange puree

This recipe combines carrots and sweet potatoes (also known as ‘Yams’) – both great root vegetables packed with Vitamin A in the form of beta-Carotene.

Sweet potatoes are also known as Yams and are a great source of Vitamin A in the form of Beta-Carotenes.

A good source of

  • Vitamin A (Beta-Carotene)
  • Vitamin C
  • Fibre
  • Manganese

Ingredients

  • 2 x large Carrots
  • 1/2 x Sweet Potato
  • 1 x Teaspoon of Orange Juice
  • Breastmilk or formula

You will need

Method

1) Prepare the Carrots and sweet potatoes by peeling and cutting into small chunks.

2) Place the carrots and sweet potatoes into seperate saucepans, cover with hot water and boil until they break up easily, You can test this with a fork. Carrots may take around fifteen minutes while the sweet potato will take a lot less, depending on how large your pieces are.

3) Drain both, combine and mash thoroughly using a potato masher or a blender.

4) Add the orange juice and then add enough breastmilk or formula to make the puree to your desired consistency.

5) Fill up you ice cube tray evenly with the puree and, when cooled completely, place in the freezer.

6) Once frozen you can empty you portions into a freezer bag so you can use the cube tray again!

To reheat just warm a portion in a saucepan or the microwave. Test the temperature on your top lip.

If you do use a microwave to heat food always remember to stir thoroughly to remove hotspots!
