Roast Red Cabbage and Apple Puree

Cabbage is in my top ten of favourite vegetables. Which is strange considering it was in my bottom ten at school. This baby food recipe is a hundred times more flavoursome than the stewed, watery mess I ate in the canteen. The red variety is as beautiful as it is tasty and to keep this colour you need to add a bit of acidity while cooking.

  • Vitamin K
  • Vitamin C
  • Vitamin B2
  • Fibre

Ingredients

  • 1 x Medium Red Cabbage
  • 2 x Apples
  • 2 x Tablespoons Cider Vinegar (or any other vinegar will do)
  • 1 and 1/2 x Teaspoons Brown Sugar
  • 20g Unsalted Butter
  • 6 x Tablespoons of Water

You will need

Method

1. Preheat the oven to 180 Degrees Celsius.

2. Prepare the cabbage by shredding finely on your chopping board or V Slicer.

3. Prepare the apples by coring, peeling and then finally, slicing into strips.

4. Take your roasting tin and place the cabbage and apple on the bottom. Sprinkle the vinegar, water and sugar over the top and toss the lot so everything is coated.

5. Place the roasting tin in the middle of your oven. Cook slowly at 180 Degrees Celsius for arounf 40 minutes, going in occasionally to give it a good stir.

6. You can tell when the cabbage is ready when it is soft and the apples are mushy. You may want to add more water from time to time if the mixture looks dry.

7. Allow the mixture to cool down before placing the lot into a blender and blitzing until a smooth puree. Again, you may want to add water as neccesary to get the consistency you’re looking for.

8.  Once pureed, test the mixture for acidty and sweetness. You may want to add a little vinegar or sugar to bring it to your liking.

9. Divide your puree into your portioners and place in the freezer.

10. Once frozen you can empty you portions into a freezer bag so you can use the portioners again!

To reheat just warm a portion in a saucepan over a gentle heat or in the microwave. Test the temperature on your top lip.

If you do use a microwave to heat food always remember to stir thoroughly to remove hotspots!
