Creamed Leek and Potato

Leeks and potatoes go together like Fish and Chips. Both have delicate flavours that just need a little encouragement using sour cream and herbs. For this baby weaning recipe try to get use baby leeks as they are must softer and sweeter inside.

Leeks are a good source of vitamin C

A good source of

  • Vitamin C
  • Vitamin B6
  • Copper
  • Manganese
  • Iron

Ingredients

  • 1 x Medium White Onion
  • 3 x Large Leeks or 7 x Baby Leeks
  • 3 x Medium Potatoes
  • 15g x Unsalted Butter
  • 3 x Tablespoons of Sour Cream
  • Small Handful of Chopped Parsley and Thyme
  • Breastmilk or formula

You will need


Method

1. Fill up the kettle and put on to boil.

2. Start off by preparing the onion and leeks. Dice and slice both finely. Melt the butter in your frying pan on a low heat and put the onions in first. Cook slowly for for 10 minutes and then add the leeks along with a couple of tablespoons of water. Place a lid on and let sweat on a low heat for about 20 minutes.

3. Peel and chop your potato and place in the saucepan.. Fill the saucepan with your boiled water. Place on the heat and boil for about 15 minutes or until the potatoes start to break part.

5. After the onions and leeks have been sweating and your potatoes are boiled, drain your potatoes and place back in the saucepan. Add your onion leek mixture, sour cream and some herbs to taste. Stir.

6. Add your mixture to the blender and blend thoroughly. Add enough breastmilk or formula to adjust the consistency.

7. Fill up you ice cube tray or portioner evenly with the puree and, when cooled completely, place in the freezer.

8. Once frozen you can empty you portions into a freezer bag so you can use the portioners again!

To reheat any baby food recipes just warm a portion in a saucepan over a gentle heat or in the microwave. Test the temperature on your top lip.

If you do use a microwave to heat baby food recipes always remember to stir thoroughly to remove hotspots!
